Indian street food is mostly plant-based to begin with, and because our kitchens are 100% vegetarian there is no meat or fish to cross with. Every dish below is vegan as we cook it or vegan on request, at all three restaurants: Lowell, Quincy and Woburn, Massachusetts. Dishes that need a change (oil instead of butter on the tawa, no yogurt) say so.
In our kitchen "vegan" means no milk, yogurt, paneer, butter, ghee, cheese or honey. Pani puri, sev puri, bhel, vada pav, samosa, kachori, khaman, khandvi, misal pav and the Indo-Chinese dishes are vegan as cooked. Pav is a plain bread roll with no milk or egg. Chaat that comes with yogurt (dahi puri, papdi chaat, samosa chaat) is not listed here because the yogurt is the dish. Sweets are made with milk or ghee except jalebi.
Tawa dishes such as dabeli and masala pav are toasted in butter by default; ask for oil. Fried snacks are cooked in vegetable oil only. Chutneys are made without dairy. We do not currently stock plant milk for lassi, but oat milk is available for chai, rose milk and cold coffee.

Yes. The vada is potato in gram-flour batter fried in vegetable oil, the pav contains no milk or egg, and the chutneys are plant-based.
Yes. They are toasted in butter by default on tawa dishes, so ask for oil if you want the dish fully vegan.
Jalebi. Everything else on the sweets list is made with milk or ghee.
Not yet. Nimbu pani and sugarcane juice are the vegan drinks; chai, rose milk and cold coffee can be made with oat milk.
