A lot of Gujarati snack food is built on gram flour, rice and lentils rather than wheat, so there is a real gluten-free menu here rather than a token dish. Every dish below is made without wheat, pav or semolina at all three restaurants: Lowell, Quincy and Woburn, Massachusetts. The pages for the dishes tell you which ones share a fryer with wheat items.
In our kitchen "gluten-free" means the recipe contains no wheat flour, no pav, no semolina puri and no soy sauce. Khaman dhokla, khandvi, methi gota, batata vada, onion bhajiya, tawa pulao, schezwan fried rice, most sweets and most drinks qualify. Chaat served on puri or papdi does not, and neither do the grill sandwiches, frankies, pizzas or noodles. We use compounded asafoetida (hing) that contains wheat flour in some dishes; ask for it to be left out if you are coeliac.
Steamed items (khaman, khandvi) never touch wheat. Fried gram-flour snacks are cooked in the same fryers as samosa and puri, so they are suitable for a gluten-free preference but not for a strict coeliac diet. Tawa pulao and schezwan rice are cooked to order in a clean pan on request. Tell us when you order if you need a dedicated pan and we will use one.

They are wheat-free recipes but share fryer oil with samosa and puri, so we do not recommend them for a strict coeliac diet. Steamed items are the safe choice.
The bhaji is; the pav is wheat bread. Order the bhaji with rice (tawa pulao) instead, or ask for bhaji only.
Lassi, chaas, chai, nimbu pani, sugarcane juice, badam milk, rasmalai, kulfi, basundi, shrikhand, mohanthal and gajar halwa. Jalebi and falooda are not.
