Vada pav is the Mumbai commuter's burger and the cheapest full meal on our menu. A ball of turmeric-spiced mashed potato is dipped in gram-flour batter and fried until the shell blisters, then pressed into a soft pav that has been split and swiped with dry garlic-coconut chutney and green chutney. A fried green chilli comes on the side; bite it between mouthfuls. Two of these is dinner. The Swaminarayan version leaves out garlic and onion, so the dry chutney is replaced with a peanut-sesame one; because garlic chutney is part of the standard build, the regular vada pav is not Jain.
