Dabeli comes from Kutch in western Gujarat and is a sweeter, more fragrant cousin of vada pav. Spiced potato cooked with a dabeli masala of cloves, cinnamon and dried coconut is stuffed into a pav, then finished with pomegranate seeds, masala peanuts, fine sev and a swipe of tamarind-date chutney, and pressed on the tawa with butter. It is vegan as served (we toast it in oil on request), and Swaminarayan when we leave out the onion. It is not Jain because potato is the whole point. Regulars at Quincy order it "hot", which means an extra spoon of garlic chutney.
