What it is
Pani puri is the dish P&D opened with in 2014 and the one the Quincy counter builds live every Friday to Sunday evening. Each order is eight hollow semolina puri, cracked open and filled to order with a warm potato and black chana mash, then dunked in two waters: a cold mint-coriander pani sharpened with black salt and a sweet tamarind-date pani. Eat them one at a time, the second they are filled, so the shell stays crisp. The Jain version swaps the potato for sprouted moong and leaves out onion and garlic entirely; the Swaminarayan version keeps the potato but drops onion and garlic. Ask for extra tamarind if you like it sweeter.
