What it is
The Bombay grill sandwich is three slices of white bread, buttered and spread with green chutney, layered with boiled potato, tomato, capsicum, beetroot and cheese, then pressed in a hot sandwich grill until the outside is striped and the cheese runs. It is served cut into triangles with more chutney and a dusting of chaat masala. This is the dish the Lowell counter is known for. The Jain version leaves out potato, onion and garlic (the chutney is made without garlic and the potato layer is replaced with extra capsicum and cheese); the Swaminarayan version only drops onion and garlic. White or wheat bread.
